Because [livejournal.com profile] mezdeathhead requested it (and cause it's so damned good)

Orange Chicken

2 Tb & 2 tsp margarine
1 1/2 lbs skinless, boneless chicken breasts
2 c fresh, sliced mushrooms
2 tsp flour
2/3 c water
1/4 c thawed frozen concentrated OJ
2 packets chicken broth (or 2 chicken buillon cubes)
1/2 c sliced green onions
1 c mandarin oranges


Heat the margarine in skillet. Add chicken and cook til brown. Set aside. In same skillet cook mushrooms over high heat, stirring occassionally until all the moisture has evaporated. Sprinkle the mushrooms with flour and stir quickly to combine. Gradually stir in water. Add the OJ and chicken broth and, stirring constantly, bring to a boil. Reduce heat and add chicken. Simmer for three minutes. Serve sprinkled with green onions and mandarin oranges.

That's the printed recipe. The [livejournal.com profile] taerowyn method involves halving the amount of chicken, but keeping the sauce as is and making mashed potatoes at the same time. The sauce is quite nummy on the potatoes. Let it simmer while you make the potatoes. The longer it simmers, the yummier it is (within reason, of course). I usually skip the green onion/oranges garnish as well, but then, I'm lazy.
